About the Author:

Susan J. Hewlings Ph.D., RD, CSCS, CSSD

Susan Hewlings received her Ph.D. in Nutrition from the Department of Nutrition, Food, and Exercise Sciences at Florida State University. Her dissertation research was titled “Eating Disorder Prevention Program for Pre-Adolescent Children.” She received her BS in Nutrition and her MS in Exercise Physiology also from Florida State. Susan is a Registered and Licensed Dietitian, a Board Certified Specialized in Sports Dietetics, and a Certified Strength and Conditioning Specialist. She has been involved in the food and nutrition industry for more than ten years. She is currently an Assistant Professor in the Department of Integrative Health Sciences at Stetson University, where she teaches nutrition, sports nutrition, wellness, and exercise physiology. Susan completed a summer fellowship studying protein and fat metabolism at the University of Texas Medical Branch/Shriners Burn Institute. She authored the Eating Disorders section for the American Dietetics Association’s online Clinical Care Manual. In addition, she is self-employed as a nutrition and wellness consultant, in which capacity she provides speaking, group workshops, individual nutrition counseling, and various nutrition related services. Susan incorporates an integrative, balanced approach to health and nutrition while specializing in clients with disordered eating, sports nutrition, and weight loss issues. She is also a competitive adventure racer and distance runner. She raises service dogs for Southeastern Guide Dogs, Inc.

 

Denis M. Medeiros, Ph.D., RD

Denis M Medeiros is currently the Department Head of Human Nutrition and Associate Dean for Scholarship and Research at Kansas State University. He received his Ph.D. from Clemson University. He received his BS degree in Biology from Central Connecticut State University and his MS from Illinois State University. Denis has taught at several major universities, including Mississippi State University, The University of Wyoming, The Ohio State University, and currently Kansas State University. He has taught nonmajors introductory nutrition for many years. His research has been supported by federal grants and has focused primarily on minerals, heart disease, and general mineral metabolism. Denis also received fellowships to study at the University of California-Davis and Washington University School of Medicine. He has developed programs for underrepresented minority students to be trained in the biomedical sciences working with the National Institutes of Health. He has authored or co-authored 120 publications in professional peer-referreed journals. Denis is also a registered and Licensed Dietitian.
