They purchase a car load of cheap, unbrandod flour, and a car load of one of the highest priced brands in the market, and taking out the heads of the barrels, dump the whole together and run it through a steam power mixing machine, which thoroughly mixes the two flours. Then they fill the barrels bearing the high-priced brand with it, and head them up, and then fill the un-branded barrels, and head them up and brand them Best Minnesota, or Extra St. Louis, or something else, and then when purchasers call, they show them a sample oieach, and offer the Best Minnesota for, perhaps, 50 cents less than The high-priced brand, and at the same time show them the flour in both is the same quality, and induce the purchaser to take half a car load of each. Tour merchant obtains several barrels of the flour, and you purchase one, and it fails to make satisfactory biscuit or bread, and you think the trouble is in the way you prepared it, etc., whereas the dishonest flour merchant is the whole source of the trouble. The best test is in using it, and if it makes good bread, biscuit, etc., it is certainly good. When baking powder is used, mix it well into the flour and then sift both, and it will be thoroughly mixed. Thoroughly bake or cook all dishes prepared from flour, because half-cooked dough is about as nearly indigestible as stone or wood. Never purchase self-rising preparations of flour. Your only safe method is to procure your flour, and sift in with each quart 2 heaping teaspoons of perfectly pure baking or aerating powder, and then you have a perfectly pure, healthy article, and you can be sure of its.
