La lomera del tomo II está parcialmente desprendida y con algunos desperfectos. El frontispicio de t. I tiene desperfectos en margenes. Contemporary half calf with gilt spine, sprinkled edges. Spine rebacked in black cloth with the original leather spine (frayed and dried, though most of in intact) mounted upon it; original boards somewhat worn and rubbed, corners bumped. A weak but clearly visible waterstain to the lower 4th of the bookblock throughout, although not overly dramatic; occasional pencil marking to outer margin, a few small spots or soils to some pages and plates, but overall good. Binding tight but a bit uneven. First free endpaper with two inscriptions (one to women's rights activist and philanthropist Anna Hierta-Retzius, the other to head waiter Sigurd Lind), rear endpaper with annotations. First published in 1856, this work is often considered ''the finest expression of the Golden Age of the French grande cuisine'' (Britannica) and made Dubois and Bernard the possibly best known chefs of the 19th century after Marie-Antoine Carême. Their major development were to replace ''service à la Française'' (serving all dishes at once) with ''service à la Russe'' (serving meals in courses but still on platters) and to develop a system of cookery which formalized the preparation of dishes with their sauces and garnishes. In its time, it was considered the pinnacle of haute cuisine. Dubois, who is also ''credited with introducing the custom of having servants wait table'' (Feret, 42), ran the palace kitchen of the King and Queen of Prussia, and Bernard was one of France’s most talented pastry chefs, as well as Napoleon III’s personal chef. Original marbled endpapers. Contents, usual light grubbiness/marking throughout and some staining to first few pages in each volume, as might be expected in any book which has spent years in a busy kitchen. A couple of leaves have small closed tears now professionally repaired with archival tape. One plate is a little worn with a couple of small tears to edges now strengthened/repaired with archival tape. All plates are present -save for the one of the Royal Family which, though listed, was never included in this edition- An impressive, original set of this classic culinary work. Text is in French.
