Chocolate-Pumpkin Brownies with Apricot Surprise
While your children are binging on candy, satisfy your sweet tooth with Chocolate-Pumpkin Brownies with Apricot Surprise
Ingredients
- 5 ounces unsweetened baking chocolate
- ½ cup unsalted butter
- 2 cups sugar
- 3 eggs
- 1½ cups canned unsweetened pumpkin
- 1 cup unbleached all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground ginger
- 1½ cups chopped pecans
- ¾ cup apricot jam
- Heat over to 350 F and grease 9”-13” baking pan
- Melt chocolate and butter in large saucepan over low heat, when almost melted remove from heat and stir in sugar.
- Beat eggs and then pumpkin until smooth. Add flour, salt, ginger and pecans.
- Scrape of the batter into baking pan and freeze for 30 min. Spread jam over the frozen batter leaving ½ inch around edge and spread remaining batter over top and bake for 45 min.
