Eater's Choice and The Good Fat Diet , the results of husband-and-wife collaborations, were written in response to the latest research linking high cholesterol levels in the blood to increased risk of heart disease. Both books include weight loss plans designed to reform the dieter's lifetime eating habits. The Underburner's Diet is the latest from Dr. Edelstein, whose diet and health books include The Woman Doctor's Diet for Women . This new book expands on and updates some of the information in that book, as women are the chief "underburners." While the first two books are roughly half explication, half cookbook, Dr. Edelstein's book covers a wider range of topics about weight and health and includes only a few recipes. The "good" fat in The Good Fat Diet is Omega-3, contained in various concentrations in fish. It is currently believed to reduce cholesterol levels and cleanse fat cells. This slim volume is a wonderful fish cookbook as well as a 14-day rapid weight loss program. Kerry Rose-Gold is a biochemist and apparently the partner largely responsible for this book. Robert Gold, the physician in the family, needed to lose weight and lower his cholesterol level, so they pooled their knowledge and created a plan that worked. Goor also needed to lower his cholesterol level. As the coordinator of the NIH seven-year Coronary Primary Prevention Trial, Goor knew that the findings linking high cholesterol levels to heart disease needed to be translated into an eating program that would produce dramatic results quickly. He gives a thorough overview of the topic and includes charts and guidelines to help individuals plan their own approaches. Keeping saturated fats to a minimum, Nancy Goor presents 200 plus recipes that have calorie and saturated fat counts included. Low-fat foods from chowders to dessert never looked so good. Dr. Edelstein's The Underburner's Diet is her frank and encouraging assessment of the wide range of problems that overweight people have to deal with when they try to diet. She is not so heart-health conscious as she is whole-person-health conscious. Her conclusion that some people burn calories more slowly than others will take the focus off willpower and turn it on finding the technique to, in a sense, reset one's thermostat. There is more explanation and musing here than a specific program. All three books seem responsibly written, espouse nothing radical, and well might prove useful. When Gold, a Los Angeles physician, and his wife, Rose-Gold, a biochemist, read in the New England Journal of Medicine that a substance known as Omega-3, a "good fat" found primarily in fish, is apparently responsible for surprisingly low levels of cholesterol in the bloodstreams of Eskimos, and low rates of coronary disease among them, they converted to a fish-centered diet. Their 14-day rapid weight-loss plan (dieters can lose up to 10 pounds in that period, the authors claim), presented here, is designed to deplete the fat in the bloodstream as well as that stored in the body's fat cells. Many of the recipes feature salmon, which appears to have the highest Omega-3 content. Much of the book is devoted to convincing the skeptic that fish tastes good; fish 'n' potato hash is basically a sop to help change the meat lover's mind-set. But Cajun-style salmon is delicious, as are the inventive variations of familiar fish dishes. Included are clear directions for selecting, freezing, cleaning, skinning, boning and spicing fish.
