Many cookbooks are written by very talented and passionate chefs who live, breathe, and eat food day in and day out. Their knowledge of ingredients, spices, flavors, and culinary techniques is unparalleled, and the food they create can be unlike anything you ve ever tasted. I am not a famous chef nor do I even aspire to be a famous chef! I don t cook food for a living, nor do I even cook dinner every night. Oh yea, I m not even really Cuban; I was born in Miami to Cuban parents making me a first generation Cuban American. So how am I qualified to write a Cuban cookbook? Although I don t cook food for a living, I have the unusual job of photographing food for a living. Making food look mouth-wateringly delicious and tasty in photographs is what I do; it s my art, and I understand it. I feel I have the same passion for photographing food as many chefs have for cooking food. It is that passion which was the catalyst for me making this cookbook. Beyond my passion for photographing food, I love cooking and eating Cuban food! It s part of my being. Most of the recipes in the book were started generations ago in Cuba and have been adapted and improved generation after generation to where they are today. Being that this book is dedicated to my culinary experiences growing up in Miami, some recipes may not have strong roots in Cuba, but more in the Cuban American culture of Miami: Either way, they re delicious! Although a great amount of thought, skill, and expertise was necessary to make the food in this book look beautiful, similar care was also taken to make sure these recipes are simple to make and don t require any special culinary skills. If I can make these, so can you! I invite you to combine a few different recipes together to make a delicious Cuban feast for your friends and family to enjoy. This is not a cookbook with hundreds of recipes, it's a small selection of just 20 recipes that are at the heart of Cuban food and you can't go wrong making any of them. These are delicious, foolproof recipes that are guaranteed to make everyone at the dinner table happy. Beyond the recipes, this book was photographed and designed to be a work of art. It was printed by a printer that does lots of art book for museums, on the very best paper stock, in order to make the images look amazing.

Written and photographed by Steve Giralt, a Miami born Cuban American. Steve Giralt is a very passionate miami, fl born cuban photographer who likes to smile a lot and is fun at parties. He studied photography at Rochester Institute of Technology, where he didn't sleep very often, but won lots of awards. His work spans many different genres from people, the places they occupy, the things they own, or the many things they'd like to own. Steve is no longer a photographer by choice, it's at the very root of who he is as a person. Taking the best picture possible and pushing the limits is the end goal of every photograph he ever takes. In 2005 Steve was selected as one of PDN magazine's 30 emerging photographers to watch. In 2006 his website won an award as part of PDN's digital PIX imaging awards. Now, Steve spends most of his time in my Manhattan studio, traveling the world with his camera, cooking, or writing. Steve still does not sleep very much.
