To borrow a phrase from Richard Collin, this is the platonic pre-Internet restaurant guidebook, a perfect encapsulation of the dining situation in New Orleans circa 1973. Collin, who died in 2010, is highly opinionated but open-minded, fussy but not without a sense of humor, and a touch gossipy but always fair-minded. He is a man who clearly loves eating and loves New Orleans cuisine, which he differentiates from both French and Cajun cuisine in a way that's easy for outsiders to understand but wouldn't make locals roll their eyes.
