Reviews

Chattman's catchy title doesn't really give a hint of what's inside her appealing new book. The recipes in her first cookbook, Cool Kitchen (Morrow, 1998), didn't require any cooking; a chance comment from a friend who hoped her next one would be on how to boil water led to this. Here the only cooking required is boilingAthough Chattman's definition is loose enough to include steaming, poaching, and simmering. The recipes are fresh and simpleACod Fillets in Fennel Broth, Chopped Spiced Zucchini and OlivesAwith a few classics in the mix, too. Chattman has an engaging style. Recommended for most collections.
