Traditional fishing along the New England coast may be a disappearing way of life, but its legacy lives on in American cuisine. Murphy's updated versions of classic New England dishes breathe new life into time-tested custom. Murphy appreciates how New England Yankee traditions have conjoined with the immigrant cooking of the Portuguese and Italians who succeeded the New Englanders on coastal fishing boats. Murphy chronicles New England's familiar chowders, but she has lightened them to appeal to contemporary dietary needs and perfumed them with fresh herbs. An entire chapter on pizzas topped with seafoods will jar those unaccustomed to their Provencal and Ligurian antecedents, but the originality of an oyster pizza with gorgonzola cheese could easily make a cook's reputation at a dinner party.
