If Studley and her editors tested these recipes with the same scrupulous care that Consumer Reports exercises on cars and washing machines, then they must have had a delicious time. Their opus will put a proverbial chicken in every pot. It delivers exactly what it says: chicken (capon, squab and game hen) recipes for formal occasions and spur-of-the-moment needs; meals for one or many; dishes cosmopolitan and down-home; seasonal repasts. The book is also a rich source for chicken recipes you may have dreamed of but never before found (e.g., chicken cooked with 40 cloves of garlic). Thorough advice is given on buying, grilling, trussing, filleting and boning. Recipes are well-organized, and use low-fat ingredients for sauces, when possible. The cook is coached in advance planning and plied with recommended side dishes by Studley, the author of many previous cookbooks and owner of two New York City restaurants. All things considered, the chicken consumer is well-served.
