Friends from my cooking classes have frequently asked me to write a step-by-step Chinese cookbook. The original intention of writing this book was to honor those requests. Simple recipes. No stories. However, as friends became more acquainted with me - a full blooded Chinese - their desire to know "beyond the wok" was expressed frequently. Questions that I would have never thought of were raised. Why use a wok? Why chop? Do Chinese eat corn? How come there are no fat Chinese? Are women still submissive? Their genuine interests stirred my own curiosity. I started to search for all the answers from a variety of sources: relatives, friends, chefs, cooks, restaurant owners and written materials. Throughout the process of searching and research, I made many wonderful friends and learned new skills for old traditions. Most of all, I rediscovered how much my Chinese heritage had meant to me. This is a collection of my own thoughts, feelings, memories and experiences, and not least, Chinese recipes.
