These words from the introduction sum up Leigh's intent in writing the book: "As a practicing, professional psychic... you will find that I am sharing with you in Say Grace some of my many and varied experiences as a medium, clairvoyant and healer. These gifts are part of my soul and I keep them in a tureen right near my four burners. In that tureen is also the Divine Spark. The Divine Spark is found in everything. It causes everything to be. May you find your Divine Spark." The colorful cover, created by her niece Kelley Grace, depicts the pelican, the Louisiana state bird. Frying pans and red peppers hang from the trees, crawfish and crabs swim in the river, and a turtle, ducks and an alligator wait on the bank. The southern images give a taste of what Leigh has planned for you inside: "Spiritual and ancestral Cajun recipes ladled into your consciousness and hungry soul." Leigh's writing style is chatty, and her humor and wit are evident on every page. She is a born story teller and each chapter reveals a little bit of her history or the history of the place where she was born, raised, and lived until forced out by the hurricane. A big part of the book are Leigh's favorite Cajun recipes: mouth-watering pork chop po-boys, crawfish jambalaya, turtle soup, Cajun red fish with mango salsa, barbeque shrimp, Odile and Edna's BiGGGGGGGGG Banana Cake, oyster pie, or wild ducks with turnip roots.

Leigh Grace's first book, Say Grace, written the summer of 2005 in a whirlwind six weeks and printed by Instant Publishers on August 29, the same day that Hurricane Katrina hit. "it makes my blood chill. Little did I know that less than 30 hours later I'd be evacuated." Before the hurricane, Leigh had been doing cruises on the Delta Queen riverboat on the Mississippi, where she gave lectures and psychic readings. They had wanted her to do a book that would be called Mystic on the Mississippi, but it didn't have a great appeal for her. Then the summer of 2005, on vacation with her son and grandson, she decided to write Say Grace.
