David Bitton began his apprenticeship in La Colombes, Paris, in 1984 at the age of fifteen. His training took him to the glamorous setting of Cannes working in a number of grand dining establishments, including the famous Carlton Intercontinental. Meeting a group of Australians in Switzerland gave him a taste for travel to the other side of the globe, and while waiting for his visa to come through, he returned to France and worked in the oldest fine dining room in Paris, the two Michelin-starred Ledoyen. With $1,000 in his pocket and no English , David arrived in Australia on Anzac Day in 1991, making his way straight from the airport to his first day at work at The Treasury at Sydney's Intercontinental Hotel. It was here that he met his future wife and business partner, Sohani. In 1994, David was Chef de Partie at The Sheraton on the Park in Sydney, quickly becoming Head Chef at the famous Gekko Restaurant in 1996. After three years, David and his wife Sohani turned their backs on their coporate careers to follow their dream of running their own cafe. In 2000 this dream became a reality when David and Sohani opened Bitton in Alexandria, the beginning of their amazing success story. This cafe has become a Sydney icon that is synonomous with a warm welcome, great service and delicious food.
