About the Author:

Jules Gouffe est ne en 1807 et mort a Neuilly-sur-Seine en 1877. Grand cuisinier, il fut un patissier hors pair et fut remarque par Antonin Careme. Il s'elevera comme cuisiner aupres de Napoleon III et officier de bouche au Jockey Club sur l'avis d'Alexandre Dumas et du Baron Brisse.
