Not illustrated. 1876 Excerpt: ...seed was bursting at one end, and how the tiny white rootlets were shooting out from the yellow shells. A day or two later the rootlets were growing fast and shooting downwards through the flannel into the water. Meanwhile the shoot, which was still folded together in the yellow shell, was growing Fa larger and altering in colour. About five or six days after the seed was sown, it was large and strong enough to cast off its shell, and begin to stretch upwards. A day or two later it opened out into two double greenish leaves. These grew fast, and became dark green on their upper side, and a rich soft violet on their under one. At this stage of growth the mustard was just fit for cutting, and very good we always found it. But if we let it grow longer, a second pair of leaves began to sprout just between the two first, these leaves being of a rough woolly texture, and not nice eating. It is always wisest to cut mustard before it is much grown, and while we can fully enjoy the juicy pleasant flavour of the first leaves. Now isn't this growing process a very wonderful one. What made the seed begin to grow, and what kept it growing, and changed the small yellow seed into a tiny plant with a long white rootlet, and a stalk standing up strong and straight, and breaking into two beautifully coloured and prettily shaped leaves at the top, which in a few days were, taken altogether, three or four times larger and heavier than the seed itself? Is it not marvellous that such a principle of life and growth should have been shut up in that small seed, and kept imprisoned there as long as you kept the seed shut up in a dry place? Isn't it extraordinary that just laying the seed on the wet flannel, or in very shallow water, should have the effect of awakening this principle...
