Synopsis

This book is about food, Caribbean food. More specifically, it contains recipes for famous one-pot Caribbean dishes: mouth-watering stews and hearty soups, thick with eddoes, breadfruit, yam, cassava, sweet potato, pumpkin and a host of other delicious ingredients. These one-pots bubble with the scents of fresh thyme, cilantro, basil, rosemary, chives, onions, and garlic. We also include one-pot dishes based on rice or beans mixed with an amazing array of ingredients. We also throw in some favourite one-pots from other cultures that have been adapted to the Caribbean. For your entertainment while you’re waiting for the food to cook, Peter has interspersed with the recipes some wildly humorous thoughts on food, family and whatever caught his fancy.Enjoy!
