Synopsis

One of the rarest and costliest of all fine wines, ice wine is notoriously difficult to make, requiring not only specific meteorological conditions but also painstaking skill and craftsmanship. Canada’s Inniskillin vineyards produce some of the world’s finest ice wines, and from Japan to Europe, the name “Inniskillin” is synonymous with the highest level of luxury goods. In this beautifully illustrated book, Donald Ziraldo leads readers on a personal tour through the amazing world of cool climate viticulture and winemaking. He draws on years of insight and experience to bring to life what is not only an exacting science, but also an expressive art and an earthy celebration of regional territory. The complex factors that determine a fine wine — soil, grape varieties, pressing, cork quality, and the all-important cold climate needed to produce ice wine — are all colorfully presented in this handsome keepsake volume.
