But the main focus is the recipes, with close to 200 recipes in 11 categories. The pages are nicely laid out, and the recipes, all of which contain nutritional information, are easy to follow. This is an excellent collection for people who want to decrease or eliminate animal products in their diets but who don't know what to do with tofu, seitan, tempeh, nutritional yeast, and other ingredients familiar to vegetarians.
