My name is Susan, I am English and have been cooking and tasting professionally for 30 years or more. I have lived and cooked in England, Wales, France, America and now live in Italy with my amazing husband, Enzo. Enzo, was diagnosed with dementia a few years ago as the result of toxic fume inhalation following the collapse of the Twin Towers in New York on September 11th, 2001. Enzo rushed to Ground Zero to help in the rescue efforts along with thousands of others and in doing so, along with thousands of others, suffers ill-health. So when I discovered that gluten free flours provide some fabulous brain healthy vitamins and minerals when compared to all-purpose wheat-based flours, I got quite excited about the whole gluten free 'thing'.
