We have to keep in mind that even thought its a mexican cookbook, it has an exact balance between the use of local ingredients and those that are from other countries such as: ginger, salmon, Brussels sprout, shallot, basil...
The design of the book is in keeping with its practical use in the kitchen. Each page turns easily and individually, while held firmly in the grip of the spiral binding, The pages heve been plasticized, so they are resistant to flour, oils and the splatter of other cooking ingredients.
