This book includes a number of dishes peculiar or favorite to certain places, regions, or ethnic groups. In some cases, the characteristic ingredients also serve to identify the region or group. For instance, too hot or peppery dishes cooked in coconut milk is very characteristic of Bicolanos, cocidos, creamy and saucy dishes that of the Pampangos, steamed, broiled and half cooked dishes of fish freshly caught--that of the Visayans, while spicy hot chili concocted dishes--that of the Muslims of the southern islands.
