About this Item

1919 printing of a 1916 book, unusual in original dust jacket. Author was assistant professor, Department of Nutrition, Teachers College, Columbia University. The difference, presumably, was the prevalence of manual labor, as opposed to sedentary desk jobs, a century ago. And presumably even today the deletion of meat from the luncheon (at least) would be applauded by nutritionists. But good heavens. Pie with ice cream to follow a hearty scalloped potato or corn chowder lunch? Coffee with cream and sugar at all three meals? Stuffed beef heart for supper, followed by suet pudding? Though we do love the "Fattening Dietary Suggested for a Thin Woman," larding up the poor frail thing with 3000 calories instead of the "ordinary requirement" of 2200. You'd think the corn chowder and chocolate blanc mange with whipped cream at lunch, followed by the steak with scalloped potatoes followed by custard and macaroons for dinner, would do the job. But no, let's not forget to add one "egg in orange juice," with "2 tsp. sugar," at 4 p.m.! After all, men aren't going to find you attractive unless you pad on those pounds, dearie!
