(USA) First Edition No markings, VG in unclipped Good + Dj with some rubbing to panels and edges. White boards, 296pp, index. B&W photos. Knapik learned to cook in France and this book draws heavily on that background although there are Chinese and Italian recipes as well. It is said that some of these dishes presented in the book were served to the exacting Alice B. Toklas. The author takes the reader slowly and clearly through the more complicated techniques and there are tips from buying meats to using spices. Knapik was an accomplished musician and composer and a director of an art gallery. He began cooking in earnest after WWII in Paris. There he and his wife begcame friends with Alice B. Toklas, who allow him to do all the cooking during the summer when all of them went to stay in Provence. This is a good cookbook to read as well as cook to as there are many interesting comments and recipes: Knapik's own fool-proof puff pastry, an outstanding Quiche Lorraine, and a wonderful Pate of breast of chicken with tarragon.
