8vo. xv, , 188 pp. Gilt and black-stamped green cloth, rubbed, slight wear to head and tail of spine, corners bumped, some spotting throughout. The third edition (first ed.: 1874) of a collection of recipes from homemakers in the Bluegrass Region of Kentucky. This is a region famous for its exceptionally fertile soil and the hospitality of its people. In addition to recipes for soups, meats, salads and desserts this cookbook includes thirty-three recipes for sour pickles and seven recipes for sweet pickles. It also provides a number of home remedies including eating mustard as an antidote to poison and rubbing lard on a bruise to help it heal more quickly. Edited by the Ladies of the Presbyterian Church, this is a good example of a community cookbook, a culinary genre that documents not just recipes but also the cultural history of specific regions. This was an important phenomena of the time, especially for women, who were able to build community with each other as they worked to compile recipes, generally with the goal of raising money for various charities and organizations. The profits from the sales of Housekeeping in the Blue Grass were donated to religious charities. As is typical with community cookbooks, the recipes include numerous author attributions. Advertisements on both pastedowns as well as pp. 170-188. On page 169 there are five newspaper recipes tipped-in as well as others laid-in. Our copy is interleaved with seventeen leaves of early lined paper which include additional legible handwritten recipes.
