Renowned New York seafood chef, Edward Brown, has put together over 250 recipes and, with food writer, Arthur Boehm, has written preambles and post ambles (and some mid-ambles) designed to help demystify the buying, preparation and cooking of fish and shellfish. In an interesting example of how seafood cookery has moved on, even since 1995, the now ubiquitous tilapia is listed in an appendix as a "recently rediscovered" variety that is worth a try (or "ltry" as it actually says in the book!
