Oswaldo Gonsalves de Lima contribuye con Pulque, balche y pajauaru al esclarecimiento de los hábitos dielécticos del hombre primigenio. Con base en sus conocimientos históricos y mitológicos de los pueblos precolombinos, indoeuropeos, asiáticos y africanos, y en su análisis etnobiologico de las bebidas y los alimentos fermentados, el autor presenta un amplio perfil de sustancias naturales y de sus transformaciones enzimáticas, aplicadas con fines nutritivos, medicinales y rituales. Particularmente, este estudio abunda en tres bebidas de los indígenas en América: el pulque -"cura mágica" de acuerdo con el informe del Códice Florentino -, el balche maya - hidromiel elaborado con cascaras de la planta de mismo nombre - y las bebidas del genero pajauaru - consumidas por las tribus de los cariabas centrales -. Asimismo, muestra el uso de estos brebajes como parte de ceremonias religiosas y sacrificiales dentro de una trama mitológica y cosmologica precolombina todavía en descubrimiento.
