Originari di Trino, in Piemonte, ove il fondatore dell'azienda, Giovanni, fu libraio-editore dall'inizio del secolo alla morte nel 1539, con il figlio Gabriele i Giolito trasferirono la sede centrale a Venezia, dove l'attività prosegue per diverse generazioni fino al 1610.
