Mr. Field became interested in the piano and in food when he was a child. He was born Feb. 21, 1915, in Manhattan, where his mother died when he was 3 years old. His father, he told an inter viewer some years ago, was âa great romantic who never did anything well.â Mr. Field was reared by Wil liam Lawrence Calhoun, a piano teacher, and Mrs. Calhoun, who, Mr. Field said, got him interested in cooking. After at tending George Washington High School he studied at the Juilliard School of Music on a scholarship. He began cooking while studying, he said, to stretch his funds. The duo-piano team of Vera Appleton and Michael Field gave its first public concert Dec. 28, 1943, in Town Hall. In the next two decades, the pianists traveled extensively, both in this country and abroad, giving concerts in which they played tire classics and intro duced the work of modern com posers. A New York Times reviewer wrote of one of their concerts: âThe playing had verve and dlegance. It was alive and had sparkle, and so held the atten tion well and aroused the en thusiasm of the large audience . . . It soon became obvious that Mr. Field was the more sensitive and imaginative of the two artists.â Mr. Field, who had married Frances Fox, a painter and writer, in 1949, continued his concert career as he grew more and more interested in food. In 1958 at the urging of friends who had been dazzled by his culinary accomplish ments, he opened a cooking school in his home at Scarsdale. Later, when food writing be came a career rather than hobby, he moved to New York and, held his classes in his apartment here. Mr. Field's classes, usually limited to about 10 persons, watched him expertly prepare some of the most complicated, mouth-watering dishes, which the students could then con sume. On one occasion, for example, Mr. Field concocted straw berries Narcisse, which called for one quart of strawberries, a cup of orange marmalade (âpreferably made with Seville oranges,â he cautioned), a half cup of orange liqueur, orange juice and rind, lemon juice and 12 ounces of Chantilly cheese. One of his students told Mr. Field, âI don't cook, I just come for lunch.â Mr. Field turned his teach ing experience into his first book, âMichael Field's Cooking School,â which was followed by âMichael Field's Culinary Clas sics and Improvisations.â The latter was devoted, to 18 classic dishes ranging from to beef in the English style to whole salmon, simmered.
