It divides into four sections: haute cuisine, plain bourgeois fare, provincial cookery and impromptu cookery. First published in this format by Librairie Larousse in French in 1987, this is the sumptuous first English edition of 1989. Some slight edge wear and browning to top and bottom of jacket and spine, corners slightly rubbed, price clipped, no inscriptions, internally clean tight and square, overall in vg+ condition. 703pp, lavishly illustrated in colour. "Known in France as the 'Bible of French cookery,' Curnonsky's Cuisine et Vins de France was first published in 1953 and has been in print ever since." Maurice Edmond Sailland (1872-1956), better known by his pen-name Curnonsky, was the most celebrated writer on gastronomy in France in the 20th century. He is often considered the inventor of gastronomic motor-tourism as popularized by Michelin, though he himself could not drive. Curnonsky died by falling out of the window of his apartment. He was dieting at the time, and it was politely speculated that he had fainted. This enormous heavy book contains a fabulous collection of classic recipes, indispensable to the home cook, food historian and professional chef. Extra postage will be required.
