Piatti e sguardie marmorizzate. Numerose silografie intercalate n.t. e 4 ritratti silografici f.t. (del marchese de Cussy, di Antonin Carême, di de Grimod de la Reynière, di Jules Gouffé). Fra le pp. 504-505, tre pagine di facsimile di una lettera autografa del 1832 del gastronomo Antonin Carême. Firma in facsimile dell'autore al verso dell'occhietto. Al foglio del titolo l'indicazione dell'indirizzo parigino del Lacam è corretta con un'annotazione manoscritta del tempo da rue de Paris, Vincennes in 43 rue Montorgueil. Al margine inferiore del frontespizio, etichetta editoriale con annuncio di un vient de paraitre gastronomico. Ottimo esemplare con il solo difetto di aloni marginali a svariate pagine. Terza edizione e terzo migliaio di classica opera di pasticceria, uno dei lavori fondamentali in tale materia, che godette di grande fortuna tra la fine del XIX secolo e gli inizi del XX. La trattazione contiene oltre 2200 ricette, oltre ad aneddoti e biografie dei grandi gastronomi e pasticceri dell'epoca, e riguarda i dolci, i gelati, gli entremets, gli sciroppi, le gelatine, le conserve di frutta, le puree, le marmellate, i timballi, etc. Il Lacam (1836-1902), nativo di Saint-Amand-de-Belvès, fu pasticcere del principe di Monaco Carlo III, membro dell'Académie de cuisine e tra le più importanti autorità in materia del suo tempo, insignito del diploma d'onore nel 1891, '92, '93, '94.
