About this Item: University of Georgia Press, United States, 2016. Paperback. Condition: New. Language: English. Brand new Book. No southern food enthusiast should be without this gathering of 1,300 flavorful recipes for such classic dishes as fried chicken, cornbread, pickled watermelon rinds, and sweet potato pie.Southern Cooking had its origins in Henrietta Dull's immensely popular cooking column in the Atlanta Journal, whose readers faithfully clipped its recipes. The demand for reprints of perennial favorites or early, hard-to-find dishes prompted Mrs. Dull to compile them into her now-famous book. Not only does it include individual recipes, but it also suggests menus for various occasions and holidays. Her famous Georgia Christmas Dinner, for instance, consists of grapefruit, roast turkey, dry stuffing, dry rice, turkey gravy, candied sweet potatoes, buttered green peas, cranberry jelly, celery hearts, hot biscuits, sweet butter, syllabub, and cake.Mrs. Dull was one of the most sought-after caterers in Atlanta even before she began her newspaper column. Her vast, practical knowledge of food and its preparation, and her embrace of new, but never gimmicky, innovations in cooking served her readers well. Upon Mrs. Dull's death in 1964 at the age of 100, the Atlanta Journal said that her book was "the standard by which regional cooks have been measured since 1928." Southern Cooking is the starting place for anyone in search of authentic dishes done in the traditional style. Seller Inventory # TNP9780820350547

Henrietta Stanley Dull (1863-1964), was an American cook and food writer from Laurens County Georgia. She was a respected authority on the cuisine of the Southern United States, and her book 'Southern Cooking' is regarded as a classic of the genre. She married Virginian Samuel Rice Dull in 1887 and the couple settled in Atlanta. When her husband became seriously ill in the early 1900s, Henrietta began selling homemade food to support their family. She later reflected 'Suddenly I found I had to be the breadwinner. I knew how to make good things to eat, I mastered a gas range. I made it work for me and talk for me'. Dull's cooking proved so popular that she was able to build a successful catering business. She gave cooking lectures and classes, and companies such as Atlanta Gas Light, Macy's, and White Lily Flour began hiring her to endorse and demonstrate their products. In 1920, assisted by a young Margaret Mitchell, Dull began writing a weekly column named 'Mrs. Dull's Cooking Lessons' for the Atlanta Journal. Published until 1945, this contained illustrated recipes, advice, and correspondence with readers. The book has remained in print, even after Henrietta died in 1964 at the age of 100. Her book contains recipes for all the Southern classics. Seller Inventory # 007026
