Alice S. Colombo, former Assistant Food Editor and columnist for The Courier-Journal, Louisville, Kentucky's award winning newspaper, has written an extraordinary cookbook. With over 600 recipes, the book covers appetizers through desserts. You'll find all the recipes for Kentucky Derby parties -Glenmary Farm's mint juleps, page 1 and on page 2, the Preakness black-eyed Susan and the Belmont Breeze; boil-baked country ham, page 180; best grits casserole, page 132; George Long's Derby breakfast egg casserole, page 199; sausage-egg casserole, page 201; chocolate chip nut pie - page 282. On page 137 are recipes for the world famous Hot Brown, the delectable sandwich served at The Brown Hotel since 1923. This is the only place you will find the recipe for the sandwich as it was served by Chef Laurent Gennari, the first chef. In 1927, the second chef, Fred Schmidt developed a different version of the Hot Brown (this is my favorite), and in 1930, Chef Harter had his version. The recipe used today at The Brown is also included on page 138. This is a cook's cookbook - not a book to be placed on a shelf to gather dust. The pages are slick and can be wiped if something is spilled, it has a spiral back so it can be folded in half, conserving space on the counter and the recipes are written in an understandable way. The ingredients are listed to the left and the directions to the right of the page, making it easy to check ingredients before shopping. This book is so full of wonderful great recipes - many from well-known restaurants across America, others developed by Colombo while she was a food stylist for a number of national food chains and magazines. There is also a recipe request from a very famous author of mysteries - see if you can find it.
