Summer Keightley has been vegan for 5 years. She has always had a healthy interest in cooking and baking, which led to her running a home-based vegan baking business for 2 years called Glad Cow Baking. Summer loves to create recipes that are easy and delicious, and she is especially interested in veganizing classic American recipes. Summer lives in Salem, Oregon with her husband and two children in a happy all veggie household.

Keightley, who always loved to bake and had become an accoplished vegetarian chef, did a lot of research and learned a great deal about the chemistry of baking. She has turned her five years of trial and error into a little culinary gem, "The Glad Cow Cookbook." Keightley created all of the recipes during the two years she ran her own vegan baking company. Most of this small book consists of recipes, all vegan. They include some items such as Cheezish Macaroni, a vegan version of the favorite that does not use any animal products. Don't dismiss the book if you are not vegan ... the recipes produce some wonderful dishes that just about anyone can enjoy. --Dan Hayes, Statesman Journal
Summer Keightley's The Glad Cow Cookbook would be easy to overlook if it were on the shelf at Borders. It's a small, unassuming book, coming in at just 64 pages, with no pictures and a very simple layout. One might mistake it as a bookmark for Vegan Planet. And that's why I like it. We all have loads of cookbooks with tons of recipes that may or may not have been tested as fully as they should be. But when you flip through The Glad Cow Cookbook, it's clear that Summer has taken time to develop and test these recipes. Each section (Baked Goods, Biscotti, Dips and Spreads, Main Dishes, Sides, Soups and Salads, and Sweets) is tiny, with less than a dozen recipes in each, but it's easy to tell that what's there is what you're likely to find in Summer's own fridge on any given day. --Ryan A.
