From Publishers Weekly:
Imaginatively making the most of a single-focus ingredient called yogurt cheese (recipe provided), the authors offer an array of creamy desserts for low-fat diets. Yogurt cheese is prepared by draining a significant amount of liquid from regular yogurt. In one example, the authors combine yogurt cheese with crushed fresh strawberries to make a strawberry "ice cream." No one will confuse this with the richest diary products, but to those on a restricted diet, it can be a welcome treat. Other recipes among the considerable variety included here are versions of rum-raisin and chocolate-mint cheesecakes, mocha-chiffon, lemon-cheese and cranberry Bavarian pies, apricot mousse and cherry-chocolate brownie bars. Strawberry sauce, crumb crust and orange topping are examples of supporting non-yogurt items. Nutritional information accompanies each clearly written recipe. Stone is author/editor of The Chosen: Appetizers and Desserts; Melvin, a cooking instructor, is author/editor of Quick & Easy; and Crawford owns a catering company. 25,000 first printing.
