(some in colour), In 1869, Hippol.yte Mège Mouriès, a chemist specializing in food research and who was then in the service of the French government, was assigned the task of preparing a product that could take the place of butter but which would be cheaper and have better keeping properties. Napoleon III expressed his personal interest in this project and Mège was enabled to carry out his experiments at the Ferme Impériale de la Faisanderie in Vincennes, which was the personal property of the Emperor. The result of his work was the discovery of a comparatively simple process for the production of a nutrient fat which could be spread and used like butter, was universally available, and easy to digest. He called his product 'margarine'. In July 1869 the French patent in this process was granted to its inventor and registered in England. This international symposium, published to mark the centenary of the invention of margarine, surveys in detail the rise of what we now call the edible fats industry, from its early beginnings in France and the Netherlands during the nineteenth century to the position it now occupies as one of the most important international strategic industries of the twentieth. Edited by J. H. van Stuyvenberg, Professor of Economic History in the University of Amstcrd4ii, and written by a team of distinguished contributors, this volume not only marks a centenary but makes an exceptionally valuable contribution to our knowledge of this complex industry, to modern economic and social history, and in particular, to the technique and discipline of business history and its related studies.
