Il libro fu inizialmente autopubblicato dall'artista nel 2008 in una piccola edizione, ampiamente acclamata, vincitrice del Silver Medal Book Award al Fotofestival di Roma e recentemente entrata a far parte della collezione del MoMA di New York."Elisabeth - I want to eat" consiste in una raccolta di fotografie anonime, lettere e cartoline appartenenti a una giovane donna, in cui l'Artista ha incespicato, entrando per caso in un negozio di Amsterdam. Wessels si è appropriata del materiale trovato in un suo personale modo, fotografando le immagini, elaborandole e arrangiandole in modo creativo e aggiungendo di tanto in tanto materiale privato. Le fotografie, intense e sensuali, riprendono una giovane donna che si atteggia in modo provocatorio davanti alla telecamera, esponendosi sia in senso figurato che alla lettera. Le fotografie in bianco e nero sono consumate, sfregiate da numerosi graffi e particelle di polvere e fondono insieme gioia e malinconia. Oltre alle fotografie, il libro contiene una serie di cartoline e lettere indirizzate a Elisabeth, da cui si deduce che la vita di questa giovane donna è andata in qualche modo fuori strada."Religione, ordine, disciplina, distacco dalla ricerca di ambizioni": questi sono, in breve, i consigli con cui un membro della famiglia si propone di "guarirla". Eppure la persona che dà il suo consiglio non racconta una storia semplice. Si è in effetti indotti a chiedersi quale delle due persone sia più bizzarra. C'è un netto contrasto nel libro tra i paesaggi idilliaci delle cartoline riprodotte e la disarmante immediatezza dello sguardo di Elisabeth nella fotocamera. Il libro contiene inserti di carta velina colorata, in cui le lettere e le cartoline di Elisabeth si trasformano quasi in un appello diretto al lettore. Il titolo della pubblicazione è tratto dall'unica lettera del libro scritta da Elisabeth stessa, indirizzata a un amico sconosciuto: "(.) L'ultima volta che ti ho visto è stato bello e mi sono sentita molto meglio. Sei ancora a Bruxelles? Non lo so, ma mi è piaciuta la casa in cui abitavi e le strade. Voglio mangiare".
