Chapters: Kwashiorkor, Scurvy, Iron deficiency, Vitamin B12 deficiency, Copper deficiency, Zinc deficiency, Iodine deficiency, Vitamin A deficiency, Pellagra, Biotin deficiency, Beriberi, Chromium deficiency, Kashin¿Beck disease, Folate deficiency, Vitamin K deficiency, Magnesium deficiency, Xerophthalmia, Acrodermatitis enteropathica, Marasmus, Ariboflavinosis, Selenium deficiency, Protein-energy malnutrition, Vitamin E deficiency, Pyridoxine deficiency, Manganese deficiency, Keshan disease, Molybdenum deficiency, Boron deficiency, Mineral deficiency, Bahima disease, Essential fatty acid deficiency. Excerpt: Scurvy is a disease resulting from a deficiency of vitamin C, which is required for the synthesis of collagen in humans. The chemical name for vitamin C, ascorbic acid, is derived from the Latin name of scurvy, scorbutus, which also provides the adjective scorbutic ('of, characterized by or having to do with scurvy'). Scurvy often presents itself initially as symptoms of malaise and lethargy, followed by formation of spots on the skin, spongy gums, and bleeding from the mucous membranes. Spots are most abundant on the thighs and legs, and a person with the ailment looks pale, feels depressed, and is partially immobilized. As scurvy advances, there can be open, suppurating wounds, loss of teeth, jaundice, fever, neuropathy and death. Scurvy was at one time common among sailors, pirates and others aboard ships at sea longer than perishable fruits and vegetables could be stored (subsisting instead only on cured and salted meats and dried grains) and by soldiers similarly separated from these foods for extended periods. It was described by Hippocrates (c. 460 BC¿c. 380 BC), and herbal cures for scurvy have been known in many native cultures since prehistory. Scurvy was one of the limiting factors of marine travel, often killing large numbers of the passengers and crew on long-distance voyages. This became a significant issue in Europe from the beginning of the modern era in the Age of Discovery in the 15th century, continuing to play a significant role through World War I in the 20th century. Today scurvy is known to be caused by a nutritional deficiency, but until the isolation of vitamin C and its direct link to scurvy in 1932, numerous theories and treatments were proposed, often on little or no experimental data. This inconsistency is attributed to the lack of vitamin C as a distinct concept, the varying vitamin C content of different foods (notably present in fresh citrus, watercress, and organ meat), and how vitamin C can be destroyed by exposure to air and copper 36 pp. Englisch.

Buch. Condition: Neu. Neuware - Increase your meat counter confidence with this must-have companion for cooking beef, pork, lamb, and veal with 391 kitchen-tested recipes.Part cookbook, part handbook organized by animal and its primal cuts, Meat Illustrated is the go-to source on meat, providing essential information and techniques to empower you to explore options at the supermarket or butcher shop (affordable cuts like beef shanks instead of short ribs, lesser-known cuts like country-style ribs, leg of lamb instead of beef tenderloin for your holiday centerpiece), and recipes that make those cuts (72 in total) shine. Meat is a treat; we teach you the best methods for center-of-the-plate meats like satisfying Butter-Basted Rib Steaks (spooning on hot butter cooks the steaks from both sides so they come to temperature as they acquire a deep crust), meltingly tender Chinese Barbecued Roast Pork Shoulder (cook for 6 hours so the collagen melts to lubricate the meat), and the quintessential Crumb-Crusted Rack of Lamb. Also bring meat beyond centerpiece status with complete meals: Shake up surf and turf with Fried Brown Rice with Pork and Shrimp. Braise lamb shoulder chops in a Libyan-style chickpea and orzo soup called Sharba. Illustrated primal cut info at the start of each section covers shopping, storage, and prep pointers and techniques with clearly written essays, step-by-step photos, break-out tutorials, and hundreds of hand-drawn illustrations that take the mystery out of meat prep (tie roasts without wilderness training; sharply cut crosshatches in the fat), so you'll execute dishes as reliably as the steakhouse. Learn tricks like soaking ground meat in baking soda before cooking to tenderize, or pre-roasting rather than searing fatty cuts before braising to avoid stovetop splatters. Even have fun with DIY curing projects.

Hardcover. Condition: new. Hardcover. Liver cirrhosis is a condition of the liver in which normal liver parenchyma is replaced by scar tissue, thereby causing long-term damage to the liver. It is always preceded by fatty liver and hepatitis. The disease progresses gradually over months or years. In its initial stages, there are often no symptoms, but as it progresses, symptoms such as tiredness, itchiness, swelling in the lower legs, yellow skin, spider-like blood vessels on the skin and fluid build up in the abdomen start to occur. Liver cirrhosis may lead to hepatic encephalopathy, liver cancer and bleeding from dilated stomach veins or from dilated veins in the esophagus. Cirrhosis may be caused by alcohol, hepatitis B and C, and non-alcoholic fatty liver disease. Though liver damage is irreversible, treatment can slow down the progression of the disease and reduce complications. Generally, antibiotics, laxatives, medications for hepatitis, chelation therapy, etc. may be prescribed depending on the underlying cause of the disease. This book provides comprehensive insights into liver cirrhosis. It provides significant information of the clinical aspects of liver cirrhosis from pathophysiology to disease management. It is appropriate for students seeking detailed information in this area as well as for experts. Shipping may be from our UK warehouse or from our Australian or US warehouses, depending on stock availability.
