Ras-related genes appear to be central to the mechanism of transformation by other oncogenes and therefore constitute a focal point upon which attempts to intervene in the process of carcinogenesis will be concentrated. The present volume contains the contributions to the NATO Advanced Research Workshop on the 'The Superfamily of ras-Related Genes' held in Agia Pelagia, Heraklion, Crete, Greece, May 1991. At this meeting the leading researchers in this field carne together to discuss the most recent progress in analysis of biological function of the ras-related genes. As an organizer I feel that the Workshop was a success, and would like to thank all the participants and the contributors to this volume. Non-vola tile water-soluble precursors and lipids influence the flavour of meat from different species. In addition, mode of heat processing and the nature of additives used may have a profound effect on the flavour of prepared meats. This book reports the latest advancements in meat flavour research. Following a brief overview, chapters 2 to 5 discuss flavours from different species of meat, namely beef, pork, poultry and mutton. In chapters 6 to 12 the role of meat constituents and processing on flavour are described. The final section of the book (chapters 13 to 15) summarizes analytical methodologies for assessing the flavour quality of meats. The cytologist studying a cell will usually have to examine its fragments, which may be dead or semiliving. In sec tions of killed cells, with the aid of the light or electron micro scope he tries to obtain some idea of the structure of the living cell. As he investigates fractions isolated from a tissue homog enate, or substances isolated from individual cells, he tries to discover the biochemical functions of the cell organoids and their components. In every case the study of degradation products of the cell (depending on the degree of degradation these may be iso lated nuclei, nucleoli, nucleolar ribosomes, ribosomal proteins and RNA, mitochondria, fragments of mitochondrial membranes, and so on) makes its own contribution to knowledge, and the infor mation obtained on different objects is mutually complementary. First as dyestuffs, meaicinals and tannins and, much later, because of their potential use in examining the systematic and… evolutionary relationships of plants, and their impli cation in defence against both herbivores and phytopatho gens. It is not surprising, therefore, that the first formally organised Society of Phytochemists, the Plant Phenolics group which was established in England in 1958, should have devoted themselves to an intensive study of these compounds. They were quickly followed by a like group in North America. But, by the mid-1960's, it was obvious to the members of both societies that their net was spread wider than just phenolic compounds and in 1965 both adopted a more appropriate name, The Phytochemical Society (now Phytochemical Society of Europe (PSE), and The Phytochemical Society of North America (PSNA) respec tively). In spite of this broadening of interest, both socie ties have continued to devote a major portion of their deliberations to phenolic compounds and it is entirely appropriate, therefore, that their first joint Symposium, held in the late summer of 1977 at the Rijksuniversiteit te Gent, Belgium, should be concerned with 'The Biochem istry of Plant Phenolics. Although the flood of important research in this area in the past deca…de has resulted in many symposia, edited collections of papers, reviews, contributions to scientific journals, and patents, apparently no organized presentation in book form has been forthcoming. In a closely connected way, another strong impetus for writing this monograph arose out of our research programs in the Materials Research Center at Lehigh University. As part of this effort, we had naturally compiled hundreds of references and become acquainted with many leaders in the field of blend and composite research. Perhaps the most important concept stressed over and over again is that engineering materials are useful because of their complexity, not in spite of it. Blends and composites are toughened because many modes of resistance to failure are available. Although such multimechanism processes are diffi cult to describe with a unified theory. we have presented available develop ments in juxtaposition with the experimental portions. But my mind goes back to 1951 and the first computers. There, there were demonstrations of arithmetic speed and storage facility; but not much idea of actual use. However, we now understand how to use computers, and in the last year or two, significant developments in the field of graphics have led to genuine applications, and economic benefits. It was readily agreed that thrombosis often played a major role in plaque building and in plaque complication. It was also commented, however, that the data were qualitative in nature and that quantitative infonnation was remarkably sparse. The term thromboatherogenesis was thought to be appropriate for those phenomena in which the full expression of the thrombotic process is manifest. At the same time, recent research was noted in which what appears to be an important pathway for the initiation of atherogenesis arises from the reaction of platelets with injured arterial endothelium and'Subendothelium without necessarily involving the complete classical thrombotic process. Since the last international conference on Optical Bistability, held in Asheville, North Carolina, June 3-5, 1980, there have been new and important fundamental advances in the field. This is borne out in papers in this volume dealing with optical chaos and period doubling bifurcations leading to chaos as well as the report of results of an experiment using a very simple system exhibiting ab sorptive optical bistability in a ring cavity using optically pump ed sodium atoms, which was successfully analyzed quantitatively by a simple theory. Other advances discussed here include the ob servation of optical bistability due to the effect of radiation pressure on one mirror of a fabry-Perot cavity. and the prediction of mirrorless intrinsic opittal bistability due to the local field correction incorporated into the Maxwell-Bloch formulation.
