Brossura. Condition: discrete. Cm.16,1x9. Pg.330. Legatura coeva in piena pergamena rigida con titoli in oro al dorso. Tagli spruzzati. La parte inferiore del frontespizio è in riproduzione fotostatica, leggermente ritoccata a mano. Il volume si presenta come terza edizione italiana del fondamentale trattato "Nouveau Cuisinier François, ou l'École des Ragouts", composto nel 1651 (Paris, Pierre David) dal celebre cuoco François Pierre De La Varenne (1615 circa - 1678), che fu "Ecuyer de Cuisine" del Marchese di Uxelles. In realtà si tratta della traduzione di tre testi anonimi, semplicemente ispirati alle teorie dell'autore francese, il cui motto era "salute, moderazione, raffinatezza". Sono comunque qui diffusi i cardini della sua dottrina gastronomica: cibi leggeri, cucinati con semplicità, in modo di mantenere integri i sapori originari, con un sapiente utilizzo di salse prelibate. Si consuma così la frattura con i canoni della gastronomia rinascimentale italiana, e si affermano i principi della grande cucina francese. Le teorie del La Varenne furono osteggiate da altri celebri cuochi, tanto che l'Autore morì in miseria a Digione. Di particolare rilievo, tra le numerosissime ricette, la parte dedicata alle confetture e alla pasticceria, oltre alla novità rappresentata dall'uso dei legumi, sino ad allora assolutamente non considerati. > Westbury, 131. Solida ed elegante legatura seicentesca in piena pelle, dorso a nervi con titoli e ricchi fregi in oro. Piccole mancanze alle estremità del dorso e qualche fioritura sparsa, peraltro esemplare genuino ed in ottimo stato di conservazione. Un'antica firma di possesso ms. al frontespizio. Rara edizione originale che contiene molte interessanti osservazioni in campo scientifico, botanico, medico ed alchemico. Da segnalare accenni specifici a territori d'oltremare tra cui l'India, le colonie americane, l'uso terapeutico del tabacco, del balsamo messicano, ed altri prodotti indigeni. Il quarto ed ultimo libro è dedicato interamente a soggetti alchemici e contiene "il vero ordine da far la pietra filosofale, per trasmutare li corpi metallici in Sole e Luna".
