Besides dozens of delicious recipes, old and new, this book traces the history of marmalade from its Roman and medieval antecedents, through its adoption in Tudor England, its development in Stuart and Georgian Britain, its nineteenth-century years of expansion, and its fortunes from then until the present day. The Book of Marmalade tells how the Portuguese learned from the Moors how to gobble up quince marmalade, and how its characteristic Arab flavorings enhanced its appeal to the Europeans. marmalade's varied roles, as a gift, as a sweetmeat, as a medicine, and as an aphrodisiac are all discussed. The earliest "Beaten" orange marmalade was followed by "shredded" or "chip" marmalade, the special choice of the Scots. it was the Scots, too, who first ate marmalade as a breakfast food instead of a dessert dish. The nineteenth century saw a huge expansion in marmalade consumption as the Victorian "English breakfast" became established, and marmalade was adopted in those countries that shared the British food tradition. Britain's marmalade manufacturers set to work to help meet the demand, beginning with Janet Keiller and her son James, whose firm was in operation in Dundee, Scotland, in 1797. Marmalade in the wider world and changing tastes in marmalade are among other topics covered in this delightful book. The author, C. Anne Wilson, worked for some years in the Brotherton Library at the University of Leeds cataloguing antique cook books. She has written extensively about food.
