JoAnna M. Lund was the author of many books, including Healthy Exchanges Cookbook, HELP: Healthy Exchanges Lifetime Plan, and Make a Joyful Table. A graduate of the University of Western Illinois, Lund founded Healthy Exchanges, a company that published a monthly newsletter, booklets, and inspirational audio and videotapes. She became a recognized spokeswoman for healthier eating, landing features in the New York Times, People, and Forbes, appearing on radio shows, and starring in her own cooking show, JoAnna Lund's HELP Yourself. Lund died of breast cancer in 2006.
Lund, well known for books like The Diabetic's Healthy Exchanges Cookbook (GK Hall, 1997) as well as her TV show Help Yourself with JoAnna Lund, has now adapted her recipes to the arthritic. Being overweight often leads to arthritis, and Lund, overweight herself, found she could alleviate some of her arthritic problems with changes in diet. Her recipes are basically intended to keep down fat, calories, and cholesterol, and she follows the guidelines of the American Dietetic Association. She also notes which recipes freeze well. Included are soups, vegetables, salads, main dishes, desserts, and miscellaneous items, such as dressings, biscuits, and muffins. Although she gives the food exchanges necessary for a diabetic, some will not agree with her use of NutrasweetTM and Saccharine TM as sweetening agents. Well written and offering good, sound advice, this book nevertheless appears to be aimed more at the diabetic than the arthritic, though most people would benefit from the information.
