Grade 9 Up-- Clear, concise writing and a well-organized text mark this examination of the procedures for food preservation, growing, and serving, with emphasis on those methods that may be detrimental to human health. The history of the pure food movement; the regulation of the food supply; and the use of chemicals such as additives, pesticides, hormones, and antibiotics in food production are explored. While several topics are potentially controversial, treatment is objective and evenhanded. Both U. S. and Canadian laws and practices are cited in the discussion. McCoy's writing style is exceptionally fluid, with an economy that packs much information but is still highly readable. Some of the black-and-white photographs have little contrast, making them unattractive and of marginal value. Older titles for a more sophisticated audience include Bernarde's The Chemicals We Eat (American Heritage, 1971; o.p.) and Verrett's Eating May Be Hazardous to Your Health , (S. & S., 1974; o.p.).
