Chef Mahler lived in Costa Rica for five years and for the last two was Chef at the remote Pacific/Rain Forest Eco-Lodge, La Cusinga. When Chef Dave arrived at the tranquil and sustainable Lodge his mission was to create food that matched the healthful and restorative qualities of the Lodge. He embarked on journeys up and down the coast and into the jungle where he met farmers, fishermen and food producers and growers. Chef Dave incorporated those ingredients and flavors into his lifetime of cooking wonderful food and came up with an entirely new cuisine for the area. These recipes are among those that created the flavors his guests came to love as well as being those most requested. About the Author
Chef David Mahler is lifetime restaurant Chef who hails from the San Francisco Bay Area. He has returned to the United States after living in Costa Rica for five years and he now resides in Oregon's Willamette Valley. Chef Dave has spent his life in pursuit of good food, great ingredients and the capture of Flavor. His cooking has taken him from his native Bay Area (after a time there in the Berkeley food scene of the late 70's and early 80's) to Boston, Cape Cod, Los Angeles, the Napa Valley, Lake Tahoe, Maui and more. Wherever there has been a chance to use new ingredients, cook new foods and learn new techniques Chef Dave has traveled. While he was in Costa Rica he wrote a food column called Chef of the Jungle for Dominical Days, the local magazine as well as writing a blog of the same name. His writings (along with the numerous guest requests for his recipes) stirred him to create this colorful cookbook full of bright flavors and simple but fully realized dishes.
