"Cuisine sante" redesigns classic recipes to lower or eliminate fats; emphasize local fruits, herbs, and vegetables; and favor such techniques as steaming and braising. Buey's version of pork tenderloin Normandy style is quite palatable, yet reduces calories, increases vegetable fiber, and replaces butter with grapeseed or safflower oil. The photographs of techniques and finished dishes are excellent; the format is handsome and practical. The mainly classic French recipes are explicit, careful in specifying time for each step, and include menu suggestions. Buey's style is low-key but engaging, and some of his recipes are treasures. SP
