"Diet food can be better, richer, and more sumptuous than most everyday foods," says Dr. Robert Atkins, author of the massive bestseller, Dr. Atkins' New Diet Revolution. Carbohydrates, in his opinion, are the root of metabolic evil and the source of hyperinsulinemia, a condition that makes it next to impossible to lose weight. Billed as a companion to his Diet Revolution book, this collection of recipes focuses on ultralow-carbohydrate dishes. His anticarb stance leads to some unconventional dietary advice: "Remember that, as a rule, the lower the fat content of a milk product, the higher its carbohydrate grams. Use cream, not skim milk; use sour cream, not yogurt."
While these recipes are certainly quick and easy to prepare and feature easy-to-find ingredients, some are very high in fat (Zabaglione, Crab and Avocado Salad, Ham and Cheese Sandwiches, Baked Eggs in Bacon Rings). While it may be true that fat is flavor and is necessary to some extent to keeping blood sugar on an even keel, these recipes won't be helpful for those who are watching their cholesterol or are on similarly restricted diets.
Robert C. Atkins, M.D., was the founder and medical chair of the Atkins Center for Complementary Medicine in New York City. In his more than 40 years of practice, he cared for more than 65,000 patients.
Until a week before his death in April 2003, Dr. Atkins continued to champion the natural healing arts as a safe and effective alternative to pharmaceutical drugs and surgery for many debilitating illnesses. A pioneer in complementary medicine, he stressed the importance of proper diet in concert with nutritional support to prevent and combat heart disease, diabetes, and obesity, all of which have grown to epidemic proportions. In more than thirty years at the Atkins Center, Dr. Atkins and his staff integrated the latest conventional medical techniques with alternative therapies.
Dr. Atkins wrote a number of books that promote controlled carbohydrate nutrition and complementary medical techniques. His original Dr. Atkins' Diet Revolution, published in 1972, introduced the Atkins Nutritional Approach?. Dr. Atkins' New Diet Revolution (1992, 1999, 2002) has sold in excess of 15 million copies worldwide, is one of the top 50 bestselling books of all time, and has remained on the New York Times bestseller list for six years. His latest book, Atkins for Life, has sold more than 1.5 million copies and has been on the bestseller list for more than six months.
Dr. and Mrs. Atkins established the Dr. Robert C. Atkins Foundation in 1999. It is dedicated to providing funding for research and education on the role of controlled carbohydrate nutritional protocols in treating and preventing a wide range of diseases and medical conditions.
