Mersmann is Adjunct Associate Professor in the Department of Pediatrics and Research Chemist at the USDA/ARS Children's Nutrition Research Center, Baylor College of Medicine. He is coeditor with Hubert C. Stanton of Swine in Cardiovascular Research.
