About the Author

Charles Dale is a resident and restaurant owner from Aspen Colorado. He owns two restaurants in Aspen, Renaissance & The R Bistro Upstairs at Renaissance, both making the Zagat's top rating list. A very high profile author, Charles Dale often makes guest appearances in the media and is well known in the culinary community. His most recent appearance included Cooking Live on the Food Network in February.
Charles Dale has been nominated twice by the esteemed James Beard Foundation for Best American Chef - Southwest, a region comprising eight states. Simply Seafood Magazine, the premier trade journal, named him "Seafood Chef of the Year, 1998". Formerly a recipient of Food and Wine Magazine's "Best New Chefs in America" award for 1995, Charles Dale has been featured in Bon Appetite, The New York Times, The Denver Post, The Rocky Mountain News, Travel and Leisure, Gourmet, and many other national and international publications. He is a regularly featured guest chef on Crystal Cruises, at the Santa Barbara Wine Auction, and has been invited to cook several sellout dinners at The James Beard Foundation in New York City.
Charles Dale has released his own line of food products, beginning with All-natural Marinades-One Minute to Use, under the St. Dalfour label (made in France), and currently available in select supermarkets nationwide. With his wife Aimée, he is also the author and publisher of The Chefs' Guide to America's Best Restaurants. The book has been featured in USAToday, The Gannett Press, and The New York Times.
