About the Author

Barbara Beery combined her natural talents for cooking and teaching to create Batter Up Kids, a children's cooking school, in 1991. She has a bachelor's degree in elementary education from the University of Texas, and spent 13 years teaching 2nd and 3rd grades and pre-school children ages 3 to 5 years.

Pink Princess Tea Parties-Excerpt
Fairytale Chocolate Muffins

Makes 12 muffins

1 cup milk chocolate chips
1/3 cup unsalted butter
3/4 cup buttermilk
1/2 cup sugar
1 egg
2 teaspoons vanilla extract
12/3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white chocolate chips
Powdered sugar




Let’s mix it up!
  1. Preheat the oven to 400 degrees F.
  2. Line a muffin tin with 12 paper liners and then place on a cookie sheet.
  3. In a small saucepan, melt the milk chocolate chips with the butter over low heat.
  4. Remove from heat and cool 10 minutes.
  5. Pour the chocolate-butter mixture into a large mixing bowl and add buttermilk, sugar, egg, and vanilla. Blend ingredients until smooth with a whisk.
  6. With a spatula, stir in flour, baking soda, and salt.
  7. Fold in the white chocolate chips.
  8. Spoon the batter equally between the paper liners.
  9. Bake for 20 to 25 minutes, or until the tops of muffins are puffed and slightly cracked.
  10. Remove muffin tin from oven and let stand at least 5 minutes before removing the muffins to cool on a wire rack.
  11. Dust with powdered sugar.


Sugar-and-Spice Cider
Makes 15 servings

1 gallon apple cider
3 cups pomegranate juice
4 cinnamon sticks
10 whole cloves
1/2 teaspoon vanilla extract
1/2 cup dried cranberries
1 orange, thinly sliced



Let’s start stirring!
  1. In a large saucepan, combine apple cider, pomegranate juice, cinnamon sticks, and cloves. Heat over low heat until mixture begins to simmer.
  2. Remove from heat and add vanilla, dried cranberries, and orange slices.
  3. Place saucepan back over low heat and stir until mixture begins to steam.
  4. Remove from heat and ladle into teacups or small glass punch cups.
