Cognac, the drink, is the brandy most other brandies in the world use as a reference of quality and try to copy. It is also the name of a sleepy town in South West France, entirely surrounded by the vineyards which produce the grapes from which cognac is made. To turn the grapes on the vine into cognac requires numerous steps: they have to be made into wine, the wine then has to be double distilled in the special stills of the region; the resulting spirit has to be matured in barrels made from oaks from two regions of France; and then cognac from different barrels and different ages has to be blended before spending yet more time in oak barrels. Only then can it be bottled and sold as cognac. In this booklet, each of the steps is explained, ending with a description of the annual cycle of work in the vineyards, which ensures that cognac produced today will be enjoyed for years ahead. Some of the history, culture and customs surrounding the drink are woven into the descriptions, along with photographs showing the various steps of the process. And for those who are lucky enough to visit Cognac, there is basic information about the town and how to get the most from the visit.

About the Author:

Brian McCulloch was born in Southern Rhodesia, which subsequently became Rhodesia, Zimbabwe-Rhodesia, and then Zimbabwe while he grew up. He studied Journalism and Economic History at Rhodes University in South Africa and has worked as a journalist in the U.K. and France where he now lives.
