Incredible Baked Cabbage
 
3 c. cabbage, shredded
1/4 c. mayonnaise
1 t. mustard
1 T. chopped pimento
2 eggs
1-1/3 c. milk
salt and pepper to taste
6 slices bread, buttered and cubed
1 c. shredded Monterey Jack or Pepper Jack cheese
1 c. shredded Swiss cheese
 
In a saucepan, cover cabbage with water. Bring to a boil over high heat. Cook until tender; drain. Add mayonnaise, mustard and pimento. In a bowl, whisk together eggs, milk, salt and pepper. In a greased 2-quart casserole dish, stir together cabbage mixture, bread cubes and cheeses; pour egg mixture over top, blending well. Bake, uncovered, at 350 degrees for 30 minutes. Serves 8 to 12.
